
It’s summertime and the heat is kicking in here in the South of the United States and all across the Americas. It takes me a moment to think about changing my cooking habits and methods for the summer. It’s usually when I am hit with the heat from the oven and stove. It’s like, “Oh! Yeah. It’s time to do less of this and more of crockpot and lighter meals. At the very least, quick and easy where the oven or the stove is on and off. For some meal prep I will wait until after the sun has gone down to put something on the stove. Say if I am going to make a light summer soup with chicken. I will boil my chicken breast the night before to shred and dump in a crockpot of slow cooker.
So, if you can’t stand the heat, I wanted to remind you there are a plethora of summer meals and meats you can cook in the slow cooker and crockpot. There are also casseroles you can do that may last you a few days depending on the number of people in your house or their appetites! Yes, you will have to turn on your stove but, not the next day. I imagine less is more.
I also remind myself what is in season by looking it up. Typically, people eat more fruits and veggies in the spring and summer. This helps me to change my breakfast options and helps with snacking. I do more smoothies in the summer than I do any other time of the year. Sliced tomatoes and eggs, grits become more of a go to. Tossing leftover veggies into soups, stir fries, and omelettes makes for a change. Also, mixing up fresh fruit and veggies, like watermelon and cucumbers or a fresh fruit salad with a little honey and lemon drizzle can become your side next to a tuna salad sandwich. I love a good BLT or a pimento cheese toasted sandwich. Any-who, I hope this jogged your memory for cooking with the heat instead of cooking in the heat.
