
As a child, when my dad would get stuffed bell peppers from a restaurant I thought it was “gross”. He would say, “Try it.” And I would say, “NO WAY”. I didn’t know any child that wanted bell peppers served for dinner. It was never made at our home but, I saw them in cafeterias. I can tell you it was somewhere around 2016 when I made one of these “things” (stuffed bell peppers) and of course my daughter wanted no parts of it. I like the inside of it but, struggled eating the bell pepper. I have since learned that I prefer to eat red, yellow, and orange bell peppers for dippings.
Fast forward to something that has all the yum of a stuffed bell pepper without the work of baking them, eating the baked bell pepper, and never really getting a change to bake them if you have a family that does not want it! Ah ha! Some genius made it a soup! “Bless them! May their taste buds never fail. May their kitchen forever be stocked with herbs and spices.” Amen.
Here is the recipe I follow and you know me, try something different. Try it with WILD RICE! Or BLACK RICE! You can use ground turkey or ground chicken.
To make this stuffed pepper soup recipe, you will need olive oil, ground beef, onion, garlic, salt, black pepper, a red bell pepper, a green bell pepper, a can of diced tomatoes, tomato sauce, beef broth, Italian seasoning, white rice and fresh parsley.
When you make stuffed pepper soup, start by heating olive oil in a large pot, then add the ground beef. Cook the beef, breaking it up into small pieces as you go, then add onion. Cook until the onion is soft, then add garlic. Season the beef and onion mixture with salt and pepper. Add the cut bell peppers, then cook for a few minutes until the peppers start to soften. Next add tomatoes, tomato sauce, beef broth and Italian seasoning. Bring the soup to a simmer, and cook until the peppers are tender. Add in the rice, and season the soup with more salt and pepper. Sprinkle with parsley, then serve.

- ▢1 pound ground beef I use 90% lean
- ▢3/4 cup chopped onion
- ▢1 1/2 teaspoons garlic minced

- ▢1 green bell pepper cut into 1/2 inch pieces
- ▢1 14.5 ounce can petite diced tomatoes
- ▢1 15 ounce can tomato sauce
- ▢1 14.5 ounce can beef broth
- ▢2 teaspoons Italian seasoning
- ▢2 cups cooked white rice
- ▢2 tablespoons chopped parsley
